  • 1 large red bell pepper
  • 1 large orange bell pepper
  • 1 red onion
  • 1 medium zucchini
  • 1 tablespoon avocado oil
  • 1 package (12 oz) chicken sausage (Italian flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • pinch of black pepper

Instructions

  1. Chop the vegetables into 1-inch pieces and place them in a large mixing bowl. Drizzle with avocado oil and toss to coat.
  2. In a small bowl, mix garlic powder, onion powder, Italian seasoning, salt, and black pepper. Add to the veggies and toss until evenly coated.
  3. Slice the chicken sausage into 3/4 inch rounds and combine with the seasoned vegetables in the large bowl.
  4. Preheat your air fryer to 390°F (if needed) and lightly spray the basket with cooking spray.
  5. Add the veggie and sausage mixture in an even layer in the air fryer basket. Cook for 10 minutes, flipping halfway through for even cooking.
