- 2 cups whole wheat pastry flour
- 2.5 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp applesauce
- 1/2 cup water
- 3 Tbsp granulated Lakanto Monk Fruit Sweetener
- non-stick cooking spray
- 3 Tbsp granulated Lakanto Monk Fruit Sweetener (for filling)
- 2 tsp cinnamon
- Preheat oven to 400°F (200°C) and spray a 9-inch cake pan with non-stick cooking spray.
- In a mixing bowl, combine whole wheat pastry flour, baking powder, and salt; whisk well.
- Add applesauce, water, and monk fruit sweetener; stir until a dough forms.
- In a small bowl, mix remaining monk fruit sweetener with cinnamon for the filling.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Lightly spray dough with cooking spray and evenly sprinkle cinnamon mixture over it.
- Roll the dough tightly from one side into a log and cut into 12 equal pieces.
- Place rolls in the prepared pan and bake for about 12 minutes until golden brown.
