  • 2 cups whole wheat pastry flour
  • 2.5 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp applesauce
  • 1/2 cup water
  • 3 Tbsp granulated Lakanto Monk Fruit Sweetener
  • non-stick cooking spray
  • 3 Tbsp granulated Lakanto Monk Fruit Sweetener (for filling)
  • 2 tsp cinnamon

Instructions

  1. Preheat oven to 400°F (200°C) and spray a 9-inch cake pan with non-stick cooking spray.
  2. In a mixing bowl, combine whole wheat pastry flour, baking powder, and salt; whisk well.
  3. Add applesauce, water, and monk fruit sweetener; stir until a dough forms.
  4. In a small bowl, mix remaining monk fruit sweetener with cinnamon for the filling.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Lightly spray dough with cooking spray and evenly sprinkle cinnamon mixture over it.
  7. Roll the dough tightly from one side into a log and cut into 12 equal pieces.
  8. Place rolls in the prepared pan and bake for about 12 minutes until golden brown.
