  • 1 yellow onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 12 large eggs
  • 1 cup milk
  • 3 cups frozen diced potatoes (no need to thaw)
  • 2 cups shredded cheddar cheese
  • Salt and pepper

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook bacon until crispy. Remove with a slotted spoon and chop once cooled.
