  • 1 ½ cups flour
  • 2 teaspoons baking powder

  • ⅔ cup buttermilk
  • 3 egg yolks
  • 3 cups milk
  • ½ cup sugar
  • ⅓ cup cornstarch
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • 8 ounces semi-sweet baking chocolate, finely chopped
  • 1 cup heavy cream

Instructions

  1. Prepare the batter by creaming softened butter and sugar until fluffy, adding eggs and vanilla.
  2. Mix dry ingredients in another bowl, then combine with the wet mixture alternately with buttermilk.
  3. Bake in a lined muffin pan at 350°F for 18 to 25 minutes until a toothpick comes out clean.
  4. Make pastry cream filling by cooking egg yolks, milk, sugar, cornstarch, and salt until thickened; cool before using.
  5. Prepare chocolate ganache by heating heavy cream and mixing it into chopped chocolate until smooth.
  6. Fill cooled cupcakes with pastry cream, then dip in ganache to finish.
