  • 1.5 lbs boneless chicken thighs, diced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 2 tbsp apple cider vinegar
  • 1/4 cup water
  • 1 tbsp cornstarch
  • 1 tbsp oil (for cooking)

Instructions

1. Cut chicken into bite-size pieces.

2. Heat oil in a large skillet over medium-high heat.

3. Add chicken and cook until lightly browned, about 5–6 minutes.

4. In a bowl, whisk soy sauce, brown sugar, garlic, ginger, vinegar, and water.

5. Pour sauce into skillet and simmer 5 minutes.

6. Mix cornstarch with 1 tbsp water, then stir into skillet.

7. Simmer 2–3 more minutes until sauce thickens and glazes chicken.

8. Serve hot over rice, garnish with sesame seeds.

Notes

Use low-sodium soy sauce to reduce salt.

Add chili flakes for heat if desired.
