  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 3 large egg whites
  • 1 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 5 oz semi-sweet chocolate chips
  • 6 tbsp heavy whipping cream
  • crushed Butterfingers for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the unsalted butter, sugars, and peanut butter until fluffy. Mix in sour cream and vanilla.
  4. Gradually add egg whites while mixing until combined.
  5. Alternate adding dry ingredients with milk and water until just combined; fold in crushed Butterfingers.
  6. Fill cupcake liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean. Cool completely before frosting.
