  • 12 oz penne or rotini pasta
  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium heat, heat olive oil and cook cubed chicken seasoned with Cajun seasoning until browned (5–7 minutes). Remove from skillet.
  4. Sauté diced onion, red bell pepper, and minced garlic in the same skillet for about 3–4 minutes.
  5. Add softened cream cheese; stir until melted. Pour in heavy cream and chicken broth; mix well.
  6. Stir in shredded cheddar cheese, Parmesan cheese, paprika, salt, and pepper until combined.
  7. Return chicken and pasta to the skillet; mix everything together.
  8. Transfer to a greased 9×13-inch baking dish and bake for 20–25 minutes until golden brown on top.
