  • 1 tbsp unsalted butter
  • 1.8 pounds starchy potatoes (preferably white or Russets)
  • 2 Romano peppers (chopped, or bell peppers)
  • 1.1 pounds lean ground beef
  • 1 yellow onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 tsp sweet paprika
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp chili flakes
  • 2 tbsp double concentrated tomato paste
  • 2 tbsp chopped parsley (more for serving)
  • 2 cups chicken broth
  • 1 ½ cups grated cheddar

Instructions

  1. Prepare ingredients: Peel and slice potatoes; chop onion, garlic, and peppers.
  2. Heat olive oil and butter in a nonstick skillet over medium-high heat. Cook potatoes until golden brown, about 6 minutes. Set aside.
  3. In the same skillet, sauté peppers for 3 minutes. Add ground beef and cook until browned.
  4. Stir in garlic and onion; cook until fragrant. Then add seasonings and tomato paste.
  5. Return potatoes to the skillet; pour in chicken broth and simmer covered for 10 minutes.
  6. Remove lid, let it simmer until most liquid evaporates. Top with cheddar cheese and cover until melted.
  7. Serve hot with optional garnishes like parsley or extra cheese.
