  • 2 boneless, skinless chicken breasts (diced)
  • 2 cups rotini pasta (uncooked)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: 2 cloves garlic (minced)

Instructions

  1. Cook the rotini in a large pot of salted boiling water until al dente. Drain and reserve some pasta water.
  2. In a skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden brown. Remove from skillet.
  3. In the same skillet, sauté broccoli for about 3-4 minutes until bright green.
  4. Lower heat; add heavy cream and chicken broth to the skillet with ranch seasoning. Simmer until thickened.
  5. Combine cooked pasta, chicken, and cheddar cheese with the sauce in the skillet. Mix well, adjusting consistency with reserved pasta water if needed.
  6. Serve hot, topped with extra cheese if desired.
