  • 1 ½ cups uncooked orzo pasta
  • 1 cup heavy cream
  • ¼ cup freshly squeezed lemon juice
  • 3 tablespoons capers
  • 2 cups baby spinach
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 1 tablespoon honey (or sugar)
  • Salt and black pepper (to taste)
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • ½ cup dry white wine (or more chicken broth)
  • 2 cups chicken broth
  • Zest of 1 lemon
  • 1 lemon (thinly sliced)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a cast iron skillet over medium heat. Melt butter and sear lemon slices until caramelized; set aside.
  2. Season chicken cutlets with salt and pepper, dredge in flour, and sear in the skillet until golden brown. Remove and set aside.
  3. Toast the orzo with garlic in the same skillet until slightly browned.
  4. Add white wine (or broth), broth, cream, lemon juice, and zest; bring to a simmer.
  5. Stir in the orzo and cook until al dente.
  6. Mix in capers, spinach, and Parmesan; return chicken to skillet.
  7. Top with caramelized lemon slices before serving.
