  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Boil water in a pot and cook the noodles according to package instructions until al dente; drain and set aside.
  2. Heat oil in a large wok or skillet over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until cooked through.
  3. Add the bell peppers, broccoli, carrot, and green onions to the wok; stir-fry for another 5 minutes until the vegetables are tender yet crisp.
  4. In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture. Pour over chicken and vegetables; mix well.
  5. Stir everything together for an additional 3-5 minutes until heated through and slightly thickened.
