  • 1/2 cup granulated sugar (100g)
  • 1/2 cup light brown sugar (110g)
  • 1 large egg
  • 3 tablespoons espresso powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (187g)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Melt the butter in the microwave and combine with granulated and brown sugars in a mixing bowl.
  2. In a separate bowl, mix espresso powder with hot water to form a paste; add it to the butter-sugar mixture along with the egg and vanilla.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt; gradually mix into the wet ingredients until a soft dough forms.
  4. Chill the dough in the refrigerator for about 30 minutes.
  5. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  6. Scoop out walnut-sized dough balls onto the prepared sheet, spacing them apart.
  7. Bake for approximately 12 minutes; let cool on the tray before transferring to a wire rack.
