  • ½ cup salsa
  • 1 tablespoon taco seasoning
  • 1 tablespoon chipotle pepper in adobo sauce
  • ½ teaspoon garlic powder
  • Olive oil for brushing
  • Flour tortillas

Instructions

  1. Preheat the oven to 450º F.
  2. Drain and rinse the black beans thoroughly.
  3. In a food processor, blend black beans, salsa, taco seasoning, chipotle pepper, garlic powder, and salt until slightly chunky.
  4. Heat olive oil in a skillet over medium-high heat, add sliced green onions, cook until fragrant, then add the bean mixture for about 5 minutes.
  5. Fill tortillas with the bean mixture and sprinkle dairy-free cheese if desired. Brush each taco with olive oil.
  6. Bake on a lightly oiled baking sheet for 6–8 minutes per side until golden brown.
