Instructions

  1. Preheat the oven to 250°F (120°C). Wash and dry the zucchinis, then slice them into thin rounds (about 1/8-inch thick).
  2. Lay the slices on paper towels, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Pat dry with another paper towel.
  3. In a large bowl, toss zucchini slices with olive oil, salt, garlic powder, smoked paprika, and black pepper until evenly coated.
  4. If desired, add grated parmesan for extra flavor and toss again.
  5. Line a baking sheet with parchment paper. Spread the seasoned zucchini slices in a single layer on the sheet.
