  • 5 pieces of bacon (cut into small pieces)
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup onion (diced)
  • 2 sticks celery (diced)
  • 1/2 teaspoon minced garlic
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 lb Yukon potatoes (peeled & diced small)
  • 2 cups sharp cheddar cheese (shredded)
  • Salt & pepper to taste
  • 1/4 cup pickles diced (optional)

Instructions

  1. Cook bacon in a soup pot over medium-high heat until crispy. Remove and set aside, leaving the fat in the pot.
  2. Brown ground beef in the same pot, draining excess fat afterwards.
  3. Sauté onion and celery in melted butter until soft.
  4. Add minced garlic and flour, stirring for about two minutes.
  5. Gradually whisk in chicken broth until smooth.
  6. Stir in heavy cream, Worcestershire sauce, diced potatoes, and browned beef. Bring to a boil then reduce to simmer with lid slightly ajar for about 15 minutes.
  7. Mix in shredded cheddar cheese until melted; adjust thickness with more broth if needed.
  8. Stir in reserved bacon and season with salt and pepper.
