  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 2 tbsp tahini
  • 3 tbsp soy sauce
  • 150 g noodles (cellophane, ramen, udon, or soba)
  • 8-10 gyoza (fresh or frozen)
  • 2 heads bok choy (halved or chopped)

Instructions

  1. Prepare all ingredients: chop bok choy, mince garlic, grate ginger, and slice scallions.
  2. Cook noodles according to package instructions in boiling water until al dente; reserve some cooking water before draining.
  3. In the same pot over medium heat, add curry paste, garlic, ginger, tahini, soy sauce, and hot oil; stir until fragrant.
  4. Gradually mix in reserved noodle cooking water to adjust broth consistency.
  5. Add bok choy and dumplings; cook for 5-7 minutes until heated through.
  6. Serve hot garnished with scallions, sesame seeds, and lime wedges.
