  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth (or vegetable broth)
  • Juice and zest of 1 large lemon
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan over medium heat, heat the olive oil and sauté the diced onion until softened (about 3-4 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in rinsed rice and toast for about 2 minutes to absorb flavors.
  3. Add chicken broth along with lemon juice and zest; bring to a boil.
  4. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed and rice is tender.
  5. Remove from heat and let it rest covered for another 5 minutes. Fluff with a fork and mix in parsley; season with salt and pepper.
