  • 4 medium zucchinis
  • 1 pound lean ground beef
  • 1 small onion
  • 2 cloves garlic
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella, cheddar, or parmesan)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Halve the zucchinis lengthwise and scoop out the flesh to create ‘boats.’
  3. In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until softened.
  4. Add ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Mix in reserved zucchini flesh, tomato sauce, Italian seasoning, paprika, salt, and pepper. Cook for about 5 minutes until heated through.
