1/2 cup unsalted butter
1 tbsp vanilla extract
1 tsp freshly-squeezed lemon juice
1 1/2 cups all-purpose flour
2 tbsp cane sugar
Pinch of ground cinnamon (optional)

1/2 cup unsalted butter, COLD + cubed
1/4–1/3 cup COLD almond milk
1 tsp apple cider vinegar
1 large egg, beaten
1 tbsp almond milk, unsweetened
Instructions

In a bowl, mix drained peaches with sugar and cornstarch until coated.
In another bowl, whisk flour, baking powder, sugar, and salt; add cold butter until crumbly.
