  • 1 medium onion (diced)
  • 2-3 garlic cloves (minced)
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes (canned)
  • 1 tablespoon tomato paste
  • 7 large bell peppers (tops removed)
  • 1 cup shredded cheddar jack cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a baking dish with the halved bell peppers.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion until softened. Add garlic and cook for another minute.
  3. Add ground beef to the skillet, cooking until browned and no longer pink.
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; cook until slightly reduced.
  5. Stuff each bell pepper with the meat mixture and place them in the baking dish.
