  • 8 oz dry pasta
  • 4 cups whole corn kernels (or 16 oz frozen corn)
  • 1 cup plain Greek yogurt
  • 2 Tbsp mayonnaise
  • 1 lime (zest and juice)
  • ½ cup crumbled cotija cheese
  • Fresh cilantro
  • Diced red onion
  • Chopped jalapeño

Instructions

  1. Cook the pasta according to package directions; drain and cool.
  2. Roast fresh corn or heat frozen corn in a skillet until warm.
  3. In a bowl, mix Greek yogurt, mayonnaise, lime zest and juice, chili powder, smoked paprika, garlic powder, salt, and pepper until smooth.
  4. In a large bowl, combine pasta with corn, cotija cheese, cilantro, red onion, and jalapeño.
  5. Pour dressing over the mixture and toss to coat evenly.
