  • 2 lb lean steak (cubed)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 4 tbsp balsamic vinegar (divided)
  • 3 cloves garlic (minced)
  • 1.5 lb baby gold potatoes (quartered)
  • 12 oz fresh green beans (trimmed)

Instructions

  1. Marinate the cubed steak in a mixture of soy sauce, balsamic vinegar, minced garlic, olive oil, salt, black pepper, and crushed red pepper for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Toss quartered baby gold potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread on a baking sheet and roast for about 25 minutes until golden brown.
  3. Heat a skillet over medium-high heat with olive oil. Cook the marinated steak in batches for about 3–4 minutes until browned on all sides.
  4. In another pan, sauté fresh green beans with olive oil, salt, and black pepper for about five minutes until tender-crisp.
  5. Serve the steak bites with roasted potatoes and sautéed green beans.
