  • 1 lb spaghetti
  • 4 tbsp olive oil
  • 1 small red onion
  • 3 garlic cloves
  • 2 cups cherry tomatoes
  • 2 cups baby spinach
  • Juice of half a lemon
  • 1 tbsp red wine vinegar
  • ⅓ cup kalamata olives
  • 4 oz crumbled feta cheese
  • Fresh basil leaves

Instructions

  1. Cook spaghetti according to package directions until al dente. Reserve ¼ cup pasta water before draining.
  2. In a skillet, heat 1 tbsp olive oil over medium-high heat. Sauté diced onions for about 3 minutes, then add minced garlic and cook for another minute.
  3. Add halved cherry tomatoes and remaining olive oil. Sauté until tomatoes soften slightly. Stir in baby spinach until wilted.
  4. Mix in olives, lemon juice, vinegar, oregano, salt, and pepper. Cook for another minute.
  5. Combine the vegetable mixture with cooked spaghetti and toss well.
  6. Fold in feta cheese and fresh basil before serving warm or at room temperature.
