  • 1 medium onion (thinly sliced)
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon garlic paste (or 4 cloves minced)
  • 2 tablespoons harissa paste
  • 2 cups chopped leafy greens
  • 15 oz can of chickpeas (drained)
  • 1 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Add onions and salt; cook until translucent and golden (7-9 minutes).
  2. Stir in balsamic vinegar, garlic paste, smoked paprika, harissa paste, oregano, greens, chickpeas, and coconut milk. Mix well.
  3. Simmer partially covered for 8-10 minutes until heated through and flavors meld.
  4. Adjust seasoning to taste, then garnish with lemon juice and fresh herbs before serving.
