  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream butter, sugar, and honey until fluffy. Beat in eggs one at a time followed by vanilla.
  4. Gradually add dry ingredients alternating with milk until combined. Gently fold in diced peaches.
  5. Fill cupcake liners about two-thirds full and bake for 18-22 minutes until a toothpick comes out clean. Cool completely.
  6. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in honey and vanilla.
