  • 1 (4 to 5 lb) chuck roast
  • 6 garlic cloves
  • 1 sweet onion
  • 1/4 cup brown sugar
  • 2 tbsp gochujang paste
  • 1/2 cup low-sodium soy sauce
  • 2 cups beef stock
  • 1 tbsp grated fresh ginger
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • fresh cilantro
  • cooked rice
  • kimchi

Instructions

  1. Prepare the braising sauce by mixing grated ginger, brown sugar, kosher salt, gochujang paste, vegetable oil, and soy sauce in a bowl.
  2. Sauté minced garlic and sliced onions in a Dutch oven until fragrant.
  3. Brown the chuck roast pieces on all sides for enhanced flavor.
  4. Pour the prepared braising sauce over the meat and add beef stock to cover.
  5. Cover and braise in a preheated oven at 325°F (165°C) for about two hours until fork-tender.
  6. Garnish with fresh cilantro before serving with rice and kimchi.
