  • 1 small white onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 6 cloves garlic, minced or pressed
  • 1/2 teaspoon crushed red pepper flakes
  • 6 to 8 cups chicken or vegetable stock
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 1/2 tablespoons Italian seasoning
  • 1 cup (8 ounces) uncooked orzo pasta
  • 2 large handfuls fresh baby spinach or kale
  • Fine sea salt and freshly cracked black pepper, to taste
  • Optional Toppings: Freshly grated Parmesan cheese, chopped fresh basil

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened. Add garlic and crushed red pepper; sauté for an additional 2 minutes.
  2. Pour in stock and add fire-roasted tomatoes along with Italian seasoning. Stir well and bring to a gentle simmer.
  3. Stir in uncooked orzo, cover, and let simmer until al dente, stirring occasionally.
  4. Fold in fresh spinach or kale until wilted. Adjust seasoning with salt and black pepper as needed.
  5. Ladle into bowls and serve hot. Top with grated Parmesan cheese or fresh herbs if desired.
