  • 2 tablespoons light brown sugar
  • 1 tablespoon lime zest (from 6-7 key limes)
  • 5 large egg yolks
  • 22 ounces sweetened condensed milk
  • 1 cup freshly squeezed lime juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix crushed vanilla wafers, melted butter, and brown sugar; press into a 9×13-inch baking dish.
  2. Bake the crust for about 10 minutes until golden, then cool.
  3. Whisk egg yolks in another bowl until thickened. Mix in sweetened condensed milk, lime juice, and zest until smooth; pour over the cooled crust.
  4. Bake again for 15-20 minutes until set and slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
  5. For topping, whip heavy cream with powdered sugar until stiff peaks form, then dollop on each square before serving.
