  • 2 medium zucchinis (sliced lengthwise)
  • 1 cup ricotta cheese
  • 0.5 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil (for garnish)
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish.
  2. Layer half of the zucchini slices in the bottom of the dish.
  3. Spread half of the ricotta cheese over the zucchini.
  4. Pour on half of the marinara sauce, followed by half of the mozzarella cheese.
  5. Repeat with remaining zucchini, ricotta, marinara, and mozzarella until all ingredients are used.
  6. Sprinkle with dried oregano and bake for 20-25 minutes until bubbly and golden.
  7. Garnish with fresh basil before serving.
