  • 1 cup old-fashioned oats
  • ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • ½ cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons sour cream or plain yogurt
  • 1 large egg yolk
  • ¼ cup freshly squeezed lemon juice
  • 1 heaping tablespoon finely grated lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, oats, salt, and baking soda. In another bowl, combine melted butter, brown sugar, and vanilla extract. Stir the dry ingredients into the wet mixture until just combined.
  3. Reserve ¾ cup of dough for topping and press the rest into the pan. Bake for 10 minutes until lightly golden.
  4. Prepare the filling by whisking together sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla until smooth.
  5. Pour the filling over the crust and sprinkle reserved dough on top. Bake for an additional 17–20 minutes until golden.
  6. Allow to cool completely before cutting into squares.
