  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil.
  3. In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Add olive oil and spices; mix well.
  4. Spread mixture evenly in the baking dish and top with mozzarella and Parmesan cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is golden and chicken reaches an internal temperature of 165°F (75°C).
  6. Garnish with parsley before serving.
