  • 1 1/2 lb large shrimp (peeled)
  • 1 bunch fresh asparagus
  • 4 tbsp olive oil (divided)
  • 5 cloves garlic (minced)
  • 1 whole red onion (sliced)
  • 1/2 tbsp each oregano and smoked paprika
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 whole lemon (juiced)
  • 1 cup black olives (pitted)
  • 1 cup feta cheese
  • 1/3 cup fresh cilantro or parsley

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. In a large mixing bowl, combine shrimp, 2 tablespoons olive oil, minced garlic, salt, black pepper, smoked paprika, oregano, and lemon juice. Toss until well-coated.
  3. Trim and wash asparagus; place it on a baking sheet drizzled with the remaining olive oil. Lay seasoned shrimp on top and add sliced red onions.
  4. Bake for about 10 minutes until shrimp are golden brown.
  5. Remove from oven and top with feta cheese, black olives, and fresh herbs. Drizzle with additional olive oil before serving.
