  • 10 oz shrimp, peeled and deveined
  • 2 medium ripe tomatoes
  • 1/2 zucchini, chopped
  • 1 small carrot, sliced
  • 3 cloves garlic
  • 1 scallion
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tbsp dried basil
  • Salt and pepper to taste
  • Optional: 2 tbsp crumbled feta cheese

Instructions

  1. Chop the tomatoes and sauté them in olive oil with a pinch of salt for about 2 minutes until they soften into a sauce.
  2. Add chopped zucchini, scallion, and sliced carrot; cover and cook for another 1-2 minutes until slightly tender.
  3. Stir in the shrimp along with chili powder and dried basil. Cook uncovered for about 6-7 minutes until shrimp are pink and opaque.
  4. Add minced garlic, and if needed, thicken the sauce with tomato paste one tablespoon at a time.
  5. Finish by stirring in crumbled feta cheese (if using) and chopped parsley before serving.
