  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Olive oil
  • Butter
  • Paprika
  • Italian seasoning
  • Salt
  • Black pepper

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with paprika, Italian seasoning, salt, and pepper; cook for 5-7 minutes until golden brown. Remove from skillet.
  3. In the same skillet, melt butter; sauté onions for 3-4 minutes until softened. Add minced garlic; cook for an additional 30 seconds.
  4. Pour in chicken broth and heavy cream; stir well and simmer for about 5 minutes to thicken.
  5. Return spaghetti and chicken to the skillet; toss to coat in sauce.
  6. Sprinkle cheese on top; cover and let sit for 2-3 minutes until melted.
  7. Serve warm with fresh parsley garnish.
