  • 2 tablespoons honey
  • 2 tablespoons avocado oil (or olive oil)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 8 ounces grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine or pearls)
  • 2 tablespoons finely chopped fresh basil
  • 2 pounds boneless, skinless chicken breasts (pounded)
  • Kosher salt and fresh black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper to create the balsamic sauce.
  3. In another bowl, combine grape tomatoes, mozzarella balls, basil, salt, and pepper for the tomato mixture.
  4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper. Sear chicken on each side until golden brown (1-2 minutes).
  5. Add balsamic sauce to the skillet; let it simmer briefly while scraping up brown bits from the pan.
  6. Remove from heat; layer tomato mozzarella mixture over the chicken.
  7. Bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F. Allow resting for 5 minutes before serving.
