Ingredients

  • 4 soft flour tortillas
  • 1 can chickpeas (15 oz)
  • 1 red potato
  • 1 roma tomato
  • 1 green onion
  • 1/2 serrano chili
  • 2 tbsp tamarind chutney
  • 1/2 cup plain full-fat yogurt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a non-stick baking tray and cut tortillas into quarters; press into the tray to form cups.
  3. Bake for about 10 minutes or until golden brown.
  4. Boil and dice the potato; mix with chickpeas, tomato, green onion, chili, and chaat masala.
  5. Fill each baked tortilla cup with the mixture and drizzle with tamarind chutney.
  6. Top with yogurt mixed with milk and sugar, then garnish with boondi, pomegranate seeds, and cilantro microgreens.
