  • 120 g Egg yolks
  • 80 g Water
  • 200 g Granulated sugar
  • 450 g Unsalted butter (softened)
  • 1/8 teaspoon Salt (optional)

Instructions

  1. In a saucepan, combine granulated sugar and water. Heat until dissolved and reaches 118°C (244°F), monitoring with a candy thermometer.
  2. While the syrup cooks, beat egg yolks in a mixing bowl on medium speed until pale and thickened.
  3. Once syrup is ready, remove from heat and gradually drizzle it into whipped egg yolks while mixer runs on low speed. Increase speed to high until cool and fluffy.
  4. Gradually add softened unsalted butter piece by piece while mixing on medium speed until incorporated and smooth.
  5. Mix in salt if desired.
