  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound pasta (spaghetti or preferred type)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse cherry tomatoes and dry them; place in a large bowl. Cut the top off the garlic head.
  3. Drizzle tomatoes with 2 tablespoons olive oil, season with salt, pepper, and red pepper flakes; toss to coat.
  4. Line a baking sheet with parchment paper; spread seasoned tomatoes on one side and place garlic head cut-side up on the other side. Drizzle garlic with olive oil and sprinkle with salt.
  5. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  6. Meanwhile, boil salted water in a pot; cook pasta according to package instructions until al dente.
  7. Reserve about 1 cup of pasta water before draining.
  8. Once roasted, let garlic cool slightly before squeezing out cloves into a mixing bowl along with roasted tomatoes and juices.
  9. Gently mash together; stir in remaining olive oil, balsamic vinegar (if using), and season as needed.
  10. Toss pasta in the bowl until well coated; add reserved pasta water gradually for desired consistency.
  11. Serve topped with fresh basil, grated Parmesan cheese, and an extra drizzle of olive oil.
