  • ½ pound sweet Italian sausage (crumbled)
  • 4 cloves garlic (minced)
  • 1 small zucchini (chopped)
  • 1 small eggplant (peeled and chopped)
  • 8 ounces bowtie pasta
  • 2 ½ cups water
  • 4 cups baby spinach
  • ¼ cup grated parmesan cheese

Instructions

  1. Heat olive oil in a large shallow pan over medium-high heat.
  2. Add crumbled sausage; cook for about 5 minutes until browned.
  3. Stir in garlic and crushed red pepper flakes; cook for 1–2 minutes until fragrant.
  4. Add zucchini and eggplant; sauté for 2–3 minutes until lightly browned.
  5. Pour in bowtie pasta and water; bring to a boil, then reduce heat and simmer for 11–12 minutes until pasta is al dente.
  6. Stir in spinach and parmesan cheese until spinach wilts; season with salt and pepper to taste.
