  • 1 pound Italian sausage
  • 5 tablespoons unsalted butter
  • 2-1/4 cups mirepoix (diced carrots, celery, yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1/4 cup sour cream

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned. Remove and set aside.
  2. In the same pot, sauté mirepoix and garlic in butter until softened.
  3. Add potatoes along with seasonings and chicken stock; bring to a boil. Reduce heat and cover until potatoes are tender.
  4. In a separate pot, melt remaining butter and whisk in flour. Gradually add milk until thickened; then stir in heavy cream.
  5. Combine milk mixture with soup and add cheese gradually until melted. Stir in sour cream and return cooked sausage to the pot.
