  • 1 cup dried red lentils
  • 3 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • Olive oil for sautéing

Instructions

  1. Rinse the dried red lentils under cold water until the water runs clear.
  2. In a saucepan, combine rinsed lentils with 3 cups of water. Bring to a boil over medium heat, then reduce heat and simmer for about 15 minutes until soft.
  3. While the lentils cook, heat olive oil in a nonstick skillet over medium heat. Sauté the chopped onion until translucent (about 5 minutes) and add minced garlic for another minute.
  4. Once lentils are cooked, drain excess water if needed. Blend the lentils with sautéed onions, garlic, and cumin powder until slightly chunky.
  5. Heat a nonstick skillet over medium heat and lightly grease it. Pour half a cup of batter per pancake into the skillet and cook until bubbles form (about 3-4 minutes). Flip and cook until golden brown (about 2-3 minutes).
  6. Serve warm with your favorite toppings.
