  • 1/2 cup Early Harvest Greek Extra Virgin Olive Oil
  • 4 garlic cloves (crushed)
  • 1 cup chopped fresh parsley
  • 12 oz grape tomatoes (halved)
  • 3 scallions (chopped)
  • Salt to taste
  • 1 tsp black pepper
  • 6 oz marinated artichoke hearts (drained)
  • 1/4 cup pitted olives (halved)
  • 1/4 cup crumbled feta cheese
  • Fresh basil leaves for garnish
  • Zest of 1 lemon
  • Crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions until al dente.
  2. In a cast iron skillet, heat olive oil over medium heat. Add crushed garlic and salt; cook for about 10 seconds.
  3. Stir in parsley, grape tomatoes, and scallions; warm through for about 30 seconds.
  4. Drain pasta and return to pot; pour in the olive oil sauce and toss well.
  5. Add black pepper, artichokes, olives, feta, basil, lemon zest, and optional red pepper flakes; toss again and serve immediately.
