  • 6 bell peppers (any color)
  • 1 pound ground beef (or ground turkey)
  • ¾ cup uncooked brown rice (or 1 ½ cups cooked)
  • ¾ cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • 15 oz can diced tomatoes
  • 8 oz can tomato sauce
  • 1 cup shredded mozzarella cheese
  • Italian seasoning

Instructions

  1. Cook rice according to package directions; set aside.
  2. Preheat oven to 400°F.
  3. Cut tops off bell peppers and remove seeds.
  4. In a skillet, heat olive oil over medium heat. Sauté onion until softened.
  5. Add ground meat; cook until browned, draining excess grease. Stir in garlic for about 30 seconds.
  6. Mix in diced tomatoes, tomato sauce, spices, and simmer for 5 minutes.
  7. Remove from heat; stir in cooked rice and half the cheese.
  8. Fill each pepper with the mixture, place in a baking dish with water, and top with remaining cheese.
  9. Cover with foil and bake for 30 minutes; uncover and bake an additional 5 minutes until cheese is golden.
