  • 400 g pasta (gluten-free if needed)
  • 350 g silken tofu
  • 70 g sun-dried tomatoes
  • 200 g roasted red peppers
  • 3 garlic cloves
  • 6 basil leaves
  • 1/4 cup nutritional yeast
  • 1/2 tsp red pepper flakes
  • 2 tbsp tomato paste

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a blender, combine silken tofu, sun-dried tomatoes, roasted red peppers, garlic, basil leaves, nutritional yeast, red pepper flakes, and tomato paste. Blend until smooth.
  3. Transfer the sauce to a pot and heat over medium while stirring occasionally.
  4. Add cooked pasta to the sauce; toss to coat evenly. Adjust consistency with reserved pasta water if necessary.
