  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • ½ lb ground beef (or turkey/lentils)
  • 1 tbsp taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper in a mixing bowl until well coated. Spread on a baking sheet and roast for about 25–30 minutes until golden and tender.
  2. Heat a skillet over medium heat. Cook ground beef until browned through, then stir in taco seasoning with 2 tablespoons of water. Let simmer for about 2–3 minutes.
  3. Assemble your bowls by dividing roasted sweet potatoes among them, topping with cooked beef, pico de gallo, guacamole, and sour cream.
