  • 2 cups cauliflower pieces
  • 1 cup carrot rounds (1/2-inch thick)
  • 1 bell pepper, sliced
  • 1/2 red onion, roughly chopped (1-inch pieces)
  • 2 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • 1 cup heavy cream or coconut cream
  • 1/3 cup parmesan cheese, shredded

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine cauliflower, carrots, bell pepper, and red onion. Drizzle with olive oil and season with salt and black pepper. Toss well.
  3. Spread the vegetable mixture evenly on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  4. In a skillet over medium heat, melt butter or olive oil. Sauté garlic and crushed red pepper flakes until fragrant.
  5. Add sun-dried tomatoes followed by heavy cream (or coconut cream) and vegetable broth. Stir well.
  6. Mix in parmesan cheese, Italian herbs, black pepper, balsamic vinegar, and fresh basil.
  7. Pour the creamy sauce over the roasted vegetables and serve hot.
