  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste
  • 1 tablespoon lime juice
  • Reserved marinade (for the peanut sauce)
  • 1/3-1/2 cup smooth peanut butter

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients: olive oil, coconut milk, soy sauce, brown sugar, chili paste, lime juice, fish sauce, basil, coriander, ginger, garlic powder, and turmeric.
  2. Reserve 1/3 cup of the marinade for the peanut sauce and transfer the rest to a zip-top bag with chicken strips. Marinate for at least 6 hours or overnight.
  3. Soak wooden skewers in water for 30 minutes before cooking.
  4. Preheat your grill or oven (350°F). Thread marinated chicken onto skewers.
  5. Grill over medium heat for about 3-4 minutes per side until cooked through (internal temperature should reach 165°F). Alternatively, bake on foil-lined sheets for 15-20 minutes.
  6. For the peanut sauce: In a saucepan, combine reserved marinade and bring to a boil. Stir in peanut butter until smooth.
