  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, beat softened butter with sugars until fluffy; add egg and vanilla extract.
  4. Gradually combine dry ingredients with the wet mixture until just mixed.
  5. Drop spoonfuls of dough onto the prepared baking sheet and bake for 12 minutes or until golden around the edges.
  6. While cooling, whip mascarpone cheese, whipping cream, powdered sugar, and vanilla until light.
  7. Top cooled cookies with mascarpone cream and dust with cocoa powder before serving.
