  • 3 ripe tomatoes, finely diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice the baguette in half lengthwise and place cut-side up on the baking sheet.
  3. In a bowl, mix diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar.
  4. Brush the cut sides of the baguette with olive oil and toast in the oven for 5–7 minutes until golden.
  5. Spoon the tomato mixture evenly over the toasted bread.
  6. If using, sprinkle Parmesan cheese on top.
  7. Bake for an additional 8–10 minutes until the tomatoes soften and edges are golden.
  8. Allow to cool slightly before slicing and serve warm.
