  • 1 (15.5-ounce) can cannellini beans
  • 2 (5-ounce) cans tuna in olive oil (drained)
  • 1/3 cup finely chopped fresh parsley
  • 1/3 cup diced red onion
  • 1/3 cup coarsely chopped sun-dried tomatoes in olive oil
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon red wine vinegar
  • 1.5 teaspoons Dijon mustard
  • 1.5 teaspoons honey
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing by combining lemon juice, zest, olive oil, mayonnaise, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper in a jar. Shake well and refrigerate.
  2. Chop the parsley and onion; coarsely chop the sun-dried tomatoes.
  3. In a large mixing bowl, combine rinsed cannellini beans, drained tuna, parsley, onion, and sun-dried tomatoes.
  4. Pour the dressing over the salad mixture and gently mix until combined.
  5. Serve immediately as is or with lettuce wraps or toasted bread.
